Easy Honey Cake (Medovik)

  • 1 cup honey
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon baking soda
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or cooking spray, then line the bottom with parchment paper.
  3. Combine the honey, sugar, eggs, and melted butter in a large mixing bowl. Mix until combined.
  4. Fold in the sour cream and vanilla extract until creamy.
  5. Whisk together the flour, baking soda, and salt in a separate bowl.
  6. Add the dry mixture gradually to the wet mixture, stirring gently until just combined.
  7. Pour the batter into the prepared pan and smooth out the top.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool the cake in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice the cake into wedges and serve.
