  • 1/4 cup non-dairy milk

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line with parchment paper.
  2. Prepare the zucchini by washing and grating it. Squeeze out excess moisture using a clean kitchen towel.
  3. Mix the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
  4. Combine the sugar, vegetable oil, non-dairy milk, and vanilla extract in a separate bowl until smooth.
  5. Add the grated zucchini to the wet mixture and stir gently, then fold in the dry ingredients.
  6. Incorporate chocolate chips, if using, and pour the batter into the prepared pan.
  7. Bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
