Roasted Beet Goat Cheese Salad

A vibrant salad featuring roasted beets, creamy goat cheese, peppery arugula, and crunchy walnuts, perfect for any occasion.

Ingredients

  • Creamy goat cheese
  • Fresh arugula
  • Walnuts
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Dash of honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the beets by rinsing and cutting off the greens.
  3. Roast the beets in aluminum foil or a baking dish for about 45–60 minutes.
  4. Make the vinaigrette by whisking olive oil, balsamic vinegar, honey, salt, and pepper.
  5. Assemble the salad in a bowl with arugula, sliced roasted beets, crumbled goat cheese, and walnuts.
  6. Toss gently and serve immediately.
