Lemon Herb Couscous Chicken

A flavorful dish full of zest, vibrant herbs, and a perfect balance of crispy and juicy chicken paired with fluffy couscous.

  • 2 boneless, skinless chicken breasts
  • 3 tablespoons olive oil (divided)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1 cup couscous
  • 1 ½ cups chicken broth (or vegetable broth)
  • ¼ cup fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Marinate the Chicken: In a mixing bowl, blend 2 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, cumin, salt, and pepper. Coat the chicken breasts with this mixture and let it marinate for at least 30 minutes.
  2. Cook the Couscous: In a medium-sized pot, bring chicken broth to a boil, add in the couscous, stir, and cover. Let it sit for 5 minutes, fluff with a fork, and stir in the fresh parsley.
  3. Sear the Chicken: In a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through.
  4. Let It Rest: Remove the chicken from the skillet and let it rest for a few minutes to retain its juices.
  5. Plate and Serve: Place a scoop of couscous on a plate, top with chicken slices, garnish with parsley, and serve with lemon wedges.
