Watermelon Feta Salad with Avocado

A refreshing summer salad combining juicy watermelon, creamy avocados, and tangy feta for a delightful mix of flavors.

  • 6 cups cubed watermelon
  • 23 ripe avocados
  • ⅔ cup feta cheese
  • ¼ cup red onion (diced)
  • ½ cup cilantro (chopped)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon red wine vinegar
  • Juice of 1 lime (approx. 2 tablespoons)
  • Sea salt and cracked pepper to taste
  • Optional add-in: arugula

Instructions

  1. Prepare the Watermelon: Start by cutting your watermelon into cubes. Once cubed, toss the watermelon into a large mixing bowl.
  2. Dice Your Avocados: Cut the avocados in half, remove the pit, scoop out the flesh, and slice it into chunks. Toss the avocado in lime juice as you mix it with your watermelon.
  3. Crumble in the Feta: Crumble your feta over the watermelon and avocado mixture.
  4. Add the Aromatics: Chop your red onion and cilantro, then toss these aromatic ingredients into the salad bowl.
  5. Whisk Up the Dressing: In a small bowl, combine the olive oil, red wine vinegar, lime juice, and seasonings. Whisk until emulsified.
  6. Drizzle and Toss: Pour the dressing over the salad and gently toss everything together.
  7. Serve It Up! Adjust the seasoning one last time and garnish with more feta and fresh cilantro if desired.

Notes

Best served fresh. Can be prepared a few hours ahead but dress right before serving for optimal texture.
