Refreshing Watermelon Cucumber Feta Salad

A vibrant and refreshing summer salad that combines juicy watermelon, crunchy cucumber, and creamy feta for a delightful burst of flavor.

  • 3 cups watermelon, cubed (preferably seedless)
  • 1 unit cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing and chopping the watermelon and cucumber.
  2. Assemble the salad in a large mixing bowl, tossing together watermelon and cucumber.
  3. Crumble the feta cheese over the mixture.
  4. Add the thinly sliced red onion and chopped mint leaves to the bowl.
  5. Squeeze the juice of one lime directly over the salad.
  6. Season with salt and pepper, adjusting to taste.
  7. Taste and adjust for seasoning as needed.
  8. Chill in the fridge for at least 30 minutes before serving.

Notes

Best enjoyed fresh; leftovers can be stored in the fridge for up to 2 days.
