Dreamy Vanilla Speculoos Crêpe Cake

A deliciously layered crêpe cake infused with rich vanilla and creamy speculoos spread, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups whole milk
  • 1 tablespoon vanilla extract
  • a pinch of salt
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 cup speculoos spread
  • 1 cup whipped cream
  • 2 tablespoons icing sugar

Instructions

  1. Whisk together the flour, eggs, milk, vanilla extract, and salt in a mixing bowl until smooth.
  2. Heat a non-stick skillet over medium heat and coat with melted butter.
  3. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly, and cook for 2–3 minutes until golden.
  4. Flip the crêpe and cook for an additional minute.
  5. Repeat with the remaining batter, stacking the cooked crêpes on a plate.
  6. Layer the crêpes on a serving platter with speculoos spread and whipped cream until all crêpes are used.
  7. Top with extra whipped cream or a dusting of icing sugar.

Notes

Add crushed speculoos cookies on top for crunch. You can also make this cake ahead of time and store in the fridge.
