Blueberry Cheesecake Puff Bombs

  • 1 package puff pastry
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup blueberries
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Unroll that puff pastry on a clean, lightly floured surface and cut it into 4-inch squares.
  3. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  4. Gently fold in the blueberries.
  5. Place a spoonful of the cheesecake mixture in the center of each pastry square, leaving room to seal.
  6. Fold the corners over the filling and pinch to seal tightly. Brush with egg wash.
  7. Bake for about 15-20 minutes until puffed and golden brown.
  8. Allow to cool for a few minutes before serving.

Serve with a dusting of powdered sugar or alongside ice cream or whipped cream.
