Tasty Chicken Salad Cucumber Roll Ups

A refreshing dish perfect for snacks, lunch, or a light dinner featuring crunchy cucumbers and creamy chicken salad.

  • 2 large cucumbers
  • 1 cup cooked chicken, shredded
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. Wash the cucumbers under cold water, pat dry, and slice in half lengthwise. Scoop out the seeds to prevent soggy roll-ups.
  2. Combine shredded chicken, Greek yogurt, mayonnaise, mustard, diced celery, and diced onion in a bowl. Stir until well combined and season with salt and pepper.
  3. Fill each cucumber half with the chicken salad mixture and gently roll up. Secure with a toothpick if needed.
  4. Arrange roll-ups on a plate, sprinkle with fresh herbs, and chill for 30 minutes if possible to meld flavors.
  5. Serve these delightful bites as a snack or lunch dish.
