  • 8 oz halloumi cheese, sliced ½-inch thick
  • 24 tortilla wraps (flour, flatbread, or gluten-free)
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • ½ red onion, thinly sliced
  • 12 lettuce leaves
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon olive oil
  • Optional toppings: avocado, fresh herbs, and pickled vegetables

Instructions

  1. Prep your ingredients: Start by slicing the halloumi cheese, red bell pepper, cucumber, and onion.
  2. Heat your pan: Warm a non-stick skillet over medium heat and add the olive oil.
  3. Cook the halloumi: Once the oil is hot, gently place the halloumi slices in the skillet, cooking for 2-3 minutes on each side.
  4. Remove and set aside: Transfer the cooked halloumi to a plate and let it cool for a minute.
  5. Sauté the peppers (optional): If you prefer softer peppers, add them to the skillet and sauté for 2-3 minutes.
  6. Assemble the wraps: Start with a tortilla, layer on the lettuce leaves, then add the peppers, cucumbers, and red onions.
  7. Top with halloumi: Place the crispy halloumi slices on top and drizzle with sweet chili sauce.
  8. Tuck and roll: Fold in the sides of the tortilla and roll it up tightly.
  9. Give it a sear (optional): Return the assembled wrap to the skillet for a minute on each side until crispy.
  10. Slice and serve: Cut the wraps in half and plate them with optional toppings.

Notes

These wraps are best enjoyed fresh and can be paired with sweet potato fries or a cucumber salad.
