Stone Fruit Clafoutis

  • 3 large eggs (room temperature)
  • 1 cup whole milk (room temperature)
  • 1/2 cup heavy whipping cream (room temperature)
  • 1 tablespoon almond extract
  • 2/3 cup sugar
  • 1 cup all-purpose flour
  • 1 tablespoon butter (for greasing)
  • 1 teaspoon salt
  • 3 cups chopped assorted stone fruit or berries
  • Powdered sugar or vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch pie pan or baking dish with butter.
  3. Mix together the eggs, milk, heavy whipping cream, almond extract, sugar, flour, and salt until smooth.
  4. Fold in your chopped stone fruits gently.
  5. Pour the batter into the prepared baking dish and bake for about 40-45 minutes.
  6. Cool for at least 10-15 minutes after baking.
  7. Dust with powdered sugar before serving or serve with vanilla ice cream.
