Spiced Cantaloupe Bread

A delightful bread made with overripe cantaloupe, infused with warm spices for a moist and flavorful treat.

  • 2 cups mashed overripe cantaloupe
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease two 8-inch loaf pans with vegetable oil or cooking spray.
  3. Mash your overripe cantaloupe until smooth.
  4. In the bowl with the mashed cantaloupe, add the sugar, vegetable oil, and eggs. Whisk everything together.
  5. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
  6. Slowly add the dry ingredients into the wet ingredients, mixing gently until just combined.
  7. Pour the batter into prepared loaf pans, filling them about 3/4 full.
  8. Bake for 50-60 minutes, checking doneness with a toothpick.
  9. Remove from the oven and let cool in the pans for about 10 minutes, then cool completely on a wire rack.
  10. Slice the bread and enjoy!
