Summer Fruit Crostata

A delightful and rustic dessert showcasing the essence of summer fruits in a flaky, golden crust.

  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and diced
  • 1 egg yolk
  • 23 tablespoons ice water
  • 2 cups mixed summer fruits, sliced (peaches, berries, or cherries)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine the all-purpose flour and powdered sugar. Whisk them together until well-blended.
  2. Add the Butter: Add the chilled, diced butter to the flour mixture and work it into the flour until it resembles coarse crumbs.
  3. Mix the Wet Ingredients: In a small bowl, combine the egg yolk and 2 tablespoons of ice water. Add this to the flour mixture and stir gently until it comes together.
  4. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Prepare the Fruit Filling: In a bowl, combine your mixed summer fruits with granulated sugar, cornstarch, vanilla extract, and ground cinnamon. Toss gently until well-coated.
  6. Preheat the Oven: Preheat your oven to 375°F (190°C).
  7. Roll Out the Dough: On a floured surface, roll out your dough into a rough circle about 12 inches in diameter.
  8. Assemble the Crostata: Transfer the rolled-out dough to a parchment-lined baking sheet and spoon the fruit filling into the center.
  9. Fold Up the Edges: Gently fold the edges of the dough over the filling.
  10. Egg Wash Time: In a bowl, whisk together the egg and milk for the egg wash. Brush the edges of the dough.
  11. Bake Away: Bake for about 30-35 minutes, or until the crust is golden and fruits are bubbly.
  12. Cool and Serve: Allow to cool for at least 15 minutes before slicing.
