Halloween Mac and Cheese

A spooktacular twist on classic mac and cheese served in mini pumpkin bowls, perfect for Halloween festivities.

Ingredients

  • 8 oz macaroni (elbow, shells, or cavatappi)
  • 2 cups cheddar cheese, shredded
  • 1 cup pumpkin, pureed
  • 2 cups milk
  • 4 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Mini pumpkins for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni in a large pot of salted boiling water until al dente (about 7-8 minutes). Drain and set aside.
  3. Make the cheese sauce by melting the butter in a large saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes.
  4. Add the milk slowly while whisking to avoid lumps. Once thickened, stir in the pumpkin puree.
  5. Cheese it up by gradually adding shredded cheddar to the sauce until smooth. Season with salt, pepper, and nutmeg.
  6. Combine the cooked macaroni with the cheese sauce, making sure every piece is coated.
  7. Prepare mini pumpkins by slicing off the tops and scooping out the insides.
  8. Fill the pumpkin bowls with the mac and cheese mixture.
  9. Bake for 20-25 minutes until bubbly and golden on top.
  10. Serve and enjoy!

Notes

Feel free to experiment with different cheeses or add spices for additional flavor. Can be prepared in advance and baked just before serving.
