Watermelon Mojito Salad

A vibrant and refreshing salad combining the sweet juiciness of watermelon with zesty lime and mint, perfect for summer gatherings.

Ingredients

  • 4 lbs seedless watermelon, cut into small chunks
  • 1/4 cup fresh lime juice
  • 1/2 cup mint leaves, roughly chopped
  • 1/41/2 teaspoon salt, or to taste
  • Cayenne pepper, to taste
  • Optional: 1/2 cup diced cucumber
  • Optional: 1/2 cup diced berries (such as strawberries or blueberries)
  • Optional: 1/4 cup of rum

Instructions

  1. Prep your watermelon by slicing it into manageable sizes, making sure they’re bite-sized.
  2. Mix the dressing by whisking together the fresh lime juice and a pinch of salt.
  3. Toss in the chopped mint leaves into the bowl with the dressing.
  4. Combine the watermelon with the mint-lime mixture in a large serving bowl.
  5. Add cayenne pepper to taste over the salad and mix gently.
  6. Chill the salad in the fridge for about 30 minutes before serving.
  7. Serve the salad in a beautiful bowl or individual glasses, garnished with mint and optional balsamic glaze.
