A whimsical take on a classic dish, this Mini Monster Meatloaf is perfect for impressing family and friends, especially kids, with its fun presentation and delicious flavor.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olives (for eyes)
  • Mashed potatoes (for serving)
  • Green beans (for serving)
  • Fresh herbs (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the ground beef, breadcrumbs, milk, egg, onion, garlic, salt, and black pepper in a large mixing bowl.
  3. Shape the mixture into mini oval shapes and place on a baking sheet lined with parchment paper.
  4. Grab olives and press them into the tops of each meatloaf to create eyes.
  5. Pop the baking sheet into the oven and bake for 30-35 minutes.
  6. Boil peeled and cubed potatoes in salted water until tender, then mash with butter and cream.
  7. Steam the green beans for 5-7 minutes until bright green and tender-crisp.
  8. Let the meatloaf rest for 5 minutes before serving with mashed potatoes and green beans, garnished with fresh herbs.
