Simple Keto White Chicken Chili

A warm, filling, and utterly delicious Keto-friendly white chicken chili, perfect for any day of the week.

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Chopped cilantro for garnish

Instructions

  1. Cook the Chicken: If you haven’t already, cook your chicken breasts. You can boil them in water for about 25 minutes or until cooked through and tender. If you’re using rotisserie chicken, shred it while letting your other ingredients come together.
  2. Sauté the Vegetables: In a large pot over medium heat, add a splash of olive oil. Toss in the chopped onion and sauté until it’s translucent (about 3-4 minutes).
  3. Add Garlic and Spices: Stir in the minced garlic, cumin, and oregano. Cook for an additional minute until fragrant.
  4. Combine the Goodness: Now, add in the drained white beans, shredded chicken, and diced green chilies. Pour in the chicken broth, giving everything a good stir. Turn the heat up to bring it to a simmer, then let it bubble away for about 10-15 minutes.
  5. Cream It Up: Once your mixture has simmered, reduce the heat to low and stir in the heavy cream. Allow it to heat through gently.
  6. Final Seasoning: Add salt and pepper to taste.
  7. Serve It Up: Once you’re satisfied with the flavor, it’s time to ladle this warm goodness into bowls. Top with chopped cilantro and enjoy!
