Roasted Strawberry Lime Basil Ice Cream

A refreshing ice cream featuring roasted strawberries, zesty lime, and aromatic basil, perfect for summer gatherings.

  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • 1 teaspoon lime juice
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon lime zest
  • A pinch of salt

Instructions

  1. Preheat the Oven: Start by preheating your oven to 400°F (200°C).
  2. Roast the Strawberries: In a mixing bowl, toss the sliced strawberries with olive oil, sugar, and lime juice. Spread them evenly onto a baking sheet lined with parchment paper and roast for 20-25 minutes.
  3. Cool the Strawberries: Once they’re out of the oven, let the strawberries cool completely.
  4. Blend the Mixture: In a blender, combine the roasted strawberries, heavy cream, whole milk, sugar, vanilla extract, basil, lime zest, and salt. Blend until smooth and creamy.
  5. Chill the Mixture: Pour the blended mixture into a bowl and cover with plastic wrap. Chill in the refrigerator for at least 2 hours.
  6. Churn the Ice Cream: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions for about 20-25 minutes.
  7. Freeze the Ice Cream: Transfer the churned ice cream to an airtight container and freeze for about 4 hours for a firmer texture.

Notes

Serve with roasted strawberries on top and a sprig of fresh basil. You can also drizzle balsamic reduction for a fancy touch.
