Chocolate Chip Zucchini Bars

Indulgent and moist zucchini bars packed with chocolate chips, a perfect way to sneak in some veggies!

  • 2 medium zucchini, grated
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking dish.
  2. Grate the zucchini and squeeze out excess moisture.
  3. Whisk together the flour, baking soda, baking powder, and salt in a medium bowl.
  4. Combine melted butter, brown sugar, and granulated sugar in a large mixing bowl.
  5. Add the egg and vanilla, mixing until combined.
  6. Fold the dry ingredients into the wet mixture, then add zucchini and chocolate chips.
  7. Pour the batter into the baking dish and smooth the top.
  8. Bake for about 25-30 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
