Pumpkin Muffins

  • 1 cup canned pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin with paper liners or cooking spray.
  3. Mix wet ingredients in a large bowl: pumpkin puree, sugar, oil, and eggs.
  4. Combine dry ingredients in another bowl: flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Scoop the batter into muffin tins, filling each 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes in the pan before transferring to a wire rack.

Notes

For added flavor, try adding chocolate chips or nuts. Store in an airtight container for 2-3 days or freeze for up to 3 months.
