Pineapple Coconut Dream Cake

A tropical paradise dessert cake infused with ripe pineapple and rich coconut, topped with a dreamy frosting.

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup butter (softened)
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the cake pans.
  2. Mix the flour, baking powder, and salt in a medium bowl.
  3. Cream the butter and sugar together until fluffy.
  4. Add the eggs one at a time, then mix in the vanilla extract.
  5. Blend in the coconut and pineapple.
  6. Combine the dry ingredients with the wet mixture, alternating with milk.
  7. Bake in the oven for 25-30 minutes or until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack.
  9. Frost with cream cheese frosting or whipped cream with toasted coconut.
