A comforting pot of Beef & Butternut Squash Chili that warms your soul with sweet roasted butternut squash and savory ground beef.

  • 1 lb ground beef
  • 1 medium butternut squash (peeled and diced)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 medium onion (diced)
  • 23 cloves garlic (minced)
  • 23 tbsp chili powder
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 2 cups beef broth

Instructions

  1. Sauté the diced onion in olive oil until translucent (about 5 minutes).
  2. Add the ground beef, season with salt and pepper, and cook until browned (about 6-8 minutes).
  3. Stir in the minced garlic, chili powder, and cumin, cooking for another minute until fragrant.
  4. Toss in the diced butternut squash and let it soften with the beef and spices.
  5. Pour in the diced tomatoes and the rinsed black beans, stirring to combine.
  6. Add the beef broth and bring to a gentle boil, then reduce heat and let it simmer for 30-40 minutes.
  7. Uncover and taste, adjusting seasoning as needed.
  8. Serve into bowls, garnishing with your choice of toppings.

Notes

For a vegan option, substitute ground beef for lentils and use vegetable broth.
