Garlic Parmesan Crockpot Chicken and Potatoes

A comforting one-pot meal of tender chicken breasts and baby potatoes infused with garlic and parmesan flavors.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your chicken by seasoning with salt, black pepper, and Italian seasoning.
  2. Sauté garlic in olive oil over medium heat for about a minute.
  3. Add chicken broth and half of the grated parmesan cheese in a bowl and mix well.
  4. Layer halved baby potatoes at the bottom of the crockpot followed by seasoned chicken, then pour garlic-olive oil and broth mixtures over everything.
  5. Set the crockpot on low for 6-8 hours or high for 3-4 hours.
  6. Sprinkle remaining parmesan cheese on top 15 minutes before serving.
  7. Garnish with fresh parsley just before serving.

Notes

Serve with a side salad or roasted veggies, and crusty bread to soak up the juices.
