Roasted Veggie Soup

A comforting roasted veggie soup that transforms humble vegetables into a warm and hearty meal, perfect for cool evenings.

Ingredients

  • 2 Carrots, peeled and chopped into 1-inch pieces
  • 1 Butternut squash, peeled, deseeded, and cubed into 1-inch chunks
  • 1 Onion, sliced into wedges
  • 4 cups Vegetable broth
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste
  • Optional Herbs (e.g., Thyme, Rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the carrots, butternut squash, and onion as directed.
  3. Toss all chopped vegetables in a large bowl with olive oil, salt, pepper, and herbs.
  4. Roast the veggies on a baking sheet for 25–30 minutes until tender and slightly browned.
  5. Blend the roasted veggies with vegetable broth in a large pot until reaching desired consistency.
  6. Adjust seasoning and consider a squeeze of lemon juice.
  7. Serve warm in bowls, garnished with fresh herbs and olive oil.
