The Ultimate Mexican Rice Recipe

  • 3 Tbsp Cooking Oil
  • 1 Cup White Rice
  • 1 Tsp Minced Garlic
  • ½ Tsp Salt
  • ½ Tsp Cumin
  • ½ Cup Tomato Sauce
  • 14 oz Chicken Broth
  • 3 Tbsp Cilantro

Instructions

  1. Heat the Oil: In a medium saucepan over medium heat, add the cooking oil. Wait until it shimmers, but isn’t smoking.
  2. Toast the Rice: Add the white rice to the pan, stirring to coat each grain with oil. Cook for about 3-4 minutes, or until the rice is lightly golden brown.
  3. Add Garlic and Spices: Toss in the minced garlic, salt, and cumin. Stir continuously for about 1 minute until the garlic becomes fragrant.
  4. Pour in Tomato Sauce and Broth: Carefully pour in the tomato sauce and chicken broth, stirring to mix everything well.
  5. Bring to a Boil: Increase the heat and bring the mixture to a gentle boil.
  6. Cover and Simmer: Once boiling, lower the heat to a simmer, cover the pot, and let it cook for about 18-20 minutes.
  7. Fluff the Rice: After 20 minutes, remove the pot from heat, but keep it covered for another 5 minutes. Then, remove the lid and fluff the rice with a fork, mixing in the cilantro.

Notes

Serve warm garnished with cilantro and a wedge of lime. Pairs well with grilled chicken or shrimp.
