Creamy Thai Dumpling Soup

A warm and comforting creamy soup filled with flavorful dumplings and invigorating Thai spices.

  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups vegetable or chicken broth
  • 1 can (400 ml) coconut milk
  • 2 tablespoons red curry paste
  • 300g dumplings (fresh or frozen)
  • 2 cups spinach leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Sliced red chili, for garnish (optional)
  • Lime wedges, for serving

Instructions

  1. Heat the oil in a large pot over medium heat. Add the diced onions and sauté until translucent, about 4-5 minutes.
  2. Add the minced garlic and ginger, cooking for an additional minute until fragrant.
  3. Pour in the vegetable or chicken broth, and bring it to a gentle simmer.
  4. Stir in the coconut milk and red curry paste, allowing it to simmer for 3 minutes.
  5. Add the dumplings and cook according to package instructions, about 6-8 minutes.
  6. Toss in the spinach leaves and stir until wilted.
  7. Add the soy sauce and lime juice, stirring to combine and adjust to taste.
  8. Serve the soup in bowls, garnished with cilantro, sliced chili, and lime wedges.

Notes

For a heartier version, consider adding sliced mushrooms or shredded chicken.
