Beef Bourguignon

A comforting and rich French stew that transforms simple ingredients into a warm and hearty dish, ideal for cold evenings.

Ingredients

  • Beef Chuck (2 pounds)
  • Mushrooms (8 ounces)
  • Carrots (2 large)
  • Red Wine (2 cups)
  • Beef Broth (2 cups)
  • Onions (1 large)
  • Garlic (4 cloves)
  • Thyme (1 teaspoon, dried or 2 teaspoons, fresh)
  • Bay Leaves (2)
  • Salt and Pepper (to taste)
  • Olive Oil (for searing)

Instructions

  1. Brown the beef by cutting it into 2-inch cubes, patting them dry, and searing in a large pot over medium-high heat.
  2. Sauté the chopped onions and garlic in the same pot until soft, then add sliced mushrooms and carrots.
  3. Deglaze the pot with red wine, scraping the bottom to collect flavor.
  4. Add the browned beef back into the pot along with beef broth and seasonings.
  5. Slow cook the mixture for about 2 to 2.5 hours, ensuring flavors meld.
  6. Thicken the stew if desired by creating a slurry, then remove bay leaves.
  7. Serve hot, accompanied by fresh bread or mashed potatoes.
