Turkey Sweet Potato Skillet

A comforting and nutritious one-pan meal featuring savory ground turkey, sweet caramelized sweet potatoes, and fresh spinach.

  • 1 pound ground turkey
  • 2 medium sweet potatoes, diced
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon cumin (optional)

Instructions

  1. Prep your ingredients by dicing the sweet potatoes, chopping the onion, and mincing the garlic.
  2. Heat a large skillet over medium heat and add olive oil. Toss in the chopped onion and sauté for 4-5 minutes until translucent.
  3. Add the minced garlic and let it cook for an additional minute.
  4. Toss in the diced sweet potatoes and stir. Season with salt, pepper, and paprika. Cover and cook for 10-12 minutes until fork-tender.
  5. Push the sweet potatoes aside, creating a well in the center, and add the ground turkey. Let it brown for about 5 minutes without stirring.
  6. Mix everything together once the turkey is cooked through. Add cumin and any additional seasonings.
  7. Incorporate the fresh spinach and stir until wilted, about one minute.
  8. Taste and adjust the seasonings before serving.
  9. Plate it up and enjoy immediately, garnished with fresh herbs or cheese if desired.

Notes

Can be made ahead and stored in the refrigerator for up to 3 days. Reheat in a skillet before serving.
