Sweet Potato and Sausage Casserole

A comforting and hearty casserole combining sweet potatoes and sausage, perfect for cozy nights.

  • 2 large sweet potatoes, peeled and diced
  • 1 lb sausage (Italian or breakfast), crumbled
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and dicing them into bite-sized pieces.
  3. Brown the sausage in a large skillet over medium heat for about 5-7 minutes.
  4. Sauté the chopped onion until soft, then add the minced garlic and cook for an additional minute.
  5. Add the diced sweet potatoes, thyme, chicken broth, salt, and pepper, then simmer for about 10 minutes.
  6. Transfer the sausage and sweet potato mixture into a greased 9×13-inch casserole dish.
  7. Cheese and breadcrumbs can be sprinkled on top if using.
  8. Bake for 25-30 minutes until the cheese is golden and bubbly.
  9. Cool for a few minutes before serving.

Notes

Feel free to add herbs or spices to your liking. This dish can be made in advance and also freezes well.
