  • 1 cup fresh pineapple (cubed)
  • ¼ cup red onion (diced)

  • 8 small tortillas
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • 1 jalapeño (sliced, optional)
  • 1 avocado (sliced, optional)

Instructions

  1. Marinate the chicken thighs by combining chili powder, cumin, paprika, and lime juice. Add salt and pepper to taste.
  2. Sauté the marinated chicken in a large skillet with olive oil over medium heat for 7-8 minutes per side.
  3. Prepare the pineapple salsa by mixing fresh pineapple, red onion, cilantro, and lime juice in a bowl.
  4. Slice the cooked chicken after letting it rest on a cutting board.
  5. Warm the tortillas in a skillet for about 30 seconds on each side or in the oven.
  6. Assemble the tacos with tortillas, sliced chicken, pineapple salsa, avocado, and jalapeño if desired.

Notes

For a smoky flavor, grill the chicken and pineapple. Vegetarian option available by substituting chicken with grilled vegetables。
