Spinach Mushroom Pasta

A comforting and flavorful pasta dish with earthy mushrooms, fresh spinach, and rich Parmesan cheese, perfect for any occasion.

Ingredients

  • Pasta (linguine or fettuccine)
  • Mushrooms (button or cremini)
  • Fresh Spinach (baby spinach)
  • Parmesan Cheese (freshly grated)
  • Olive Oil (for sautéing)
  • Garlic (fresh cloves, minced)
  • Salt and Pepper (to taste)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add sliced mushrooms and sauté for about 5-7 minutes until golden brown.
  3. Add Garlic: Toss in the minced garlic to the mushrooms and sauté for another minute until fragrant.
  4. Incorporate the Spinach: Add the fresh spinach to the pan and cook, stirring frequently, until wilted (about 2-3 minutes).
  5. Combine Pasta and Sauce: Add the drained pasta to the skillet along with ½ cup of the reserved pasta water. Toss everything together until well coated.
  6. Finish with Cheese: Remove from heat and stir in grated Parmesan cheese until melted. Season with salt, pepper, and chili flakes.
  7. Serve Immediately: Plate your Spinach Mushroom Pasta and top with extra Parmesan and a drizzle of olive oil.

Notes

Feel free to add grilled chicken, shrimp, or chickpeas for extra protein. Herbs like thyme or rosemary can also elevate the flavor.
