Easy Creamy Spinach Mushroom Lasagna

A rich and creamy lasagna featuring layers of spinach, mushrooms, and cheese that is simple to make and perfect for family dinners.

  • 2 tbsp olive oil
  • 3 cups fresh spinach (roughly chopped)
  • 2 cups mushrooms (sliced)
  • 3 garlic cloves (minced)
  • Salt and pepper to taste
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk (warm)
  • ½ tsp ground nutmeg
  • 9 lasagna noodles (no-boil or pre-cooked)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup ricotta cheese

Instructions

  1. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until they release their moisture and start to brown. When they’re ready, toss in the garlic and sauté for another minute until fragrant.
  2. Add the spinach: Now, stir in the chopped spinach. Cook for 2-3 minutes until it’s tender. Season with salt and pepper to taste. Remove the skillet from the heat and set it aside.
  3. Make the creamy béchamel sauce: In a separate medium saucepan, melt the butter over medium heat. Once melted, add the flour, whisking continuously for about 2 minutes. Gradually whisk in warm milk, and keep stirring until the mixture thickens, roughly 5-7 minutes. Stir in nutmeg, salt, and pepper.
  4. Assemble the lasagna: Preheat your oven to 375°F (190°C). Spread a ladleful of the creamy sauce on the bottom of a 9×13 baking dish. Layer 3 lasagna noodles over the sauce, followed by half of the spinach and mushroom mixture, half of the ricotta, and a third of the mozzarella. Repeat with remaining ingredients and top with final layer of noodles, the remaining béchamel, mozzarella, and Parmesan.
  5. Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15-20 minutes until bubbly and golden.
  6. Let it rest: Allow your lasagna to rest for about 15-20 minutes before slicing.

Notes

Feel free to add cooked ground beef or sausage for a heartier dish. You can also prepare the lasagna ahead of time and store it in the fridge before baking.
