Creamy Spinach Garlic Chicken

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup flour for breading
  • 2 tablespoons olive oil or butter

Instructions

  1. Prep your chicken by pounding to an even thickness and season with salt and pepper.
  2. Bread the chicken by dredging in flour, shaking off excess.
  3. Sauté the chicken in a skillet with olive oil or butter for 5-7 minutes per side until golden brown.
  4. Add minced garlic to the skillet and sauté for about 30 seconds.
  5. Pour in the heavy cream and bring to a gentle simmer, then add the Parmesan cheese until melted.
  6. Toss in the spinach and cook until wilted.
  7. Return chicken to the skillet, spoon sauce over, and simmer for an additional 2-3 minutes.
  8. Serve the dish hot over rice, pasta, or with roasted veggies.

Notes

For a lighter dish, substitute heavy cream with half-and-half or coconut cream. Add mushrooms for an earthy flavor boost or a pinch of red pepper flakes for a spicy kick!
