Creamy Pumpkin Mac and Cheese

A cozy, creamy twist on classic mac and cheese with the warm flavors of pumpkin and spices.

  • 8 ounces pasta (elbow macaroni or gluten-free)
  • 1 cup pumpkin puree (canned or fresh)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk or cream
  • 2 tablespoons butter
  • Salt, pepper, and a pinch of nutmeg to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and set aside.
  2. In the same pot, melt the butter over medium heat and whisk in flour to create a roux.
  3. Add milk gradually, whisking until the sauce thickens, about 5 minutes.
  4. Incorporate the pumpkin puree, salt, pepper, and nutmeg into the sauce.
  5. Reduce heat and add cheddar cheese, stirring until melted, then add mozzarella.
  6. Mix in the cooked pasta until fully coated with the sauce.
  7. For a crispy top, transfer to a greased baking dish, top with cheese and breadcrumbs, then bake at 350°F for 15–20 minutes.

Notes

For variations, consider adding spicy jalapeños or topping with nuts for crunch. Store leftovers for 3-4 days or freeze for up to 3 months.
