  • 16 oz Mushrooms (cremini, shiitake, or button)
  • 1 medium Onion, chopped finely
  • 1 cup Heavy Cream
  • 1 tablespoon Fresh Thyme, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • Salt and Pepper to taste

Instructions

  1. Sauté your aromatics: Heat olive oil or butter in a large pot, add onions and salt, and sauté until soft, about 5 minutes.
  2. Add garlic and mushrooms: Stir in the mushrooms and minced garlic, cooking until browned, about 8-10 minutes.
  3. Incorporate the thyme: Add chopped thyme and stir for 1 minute until fragrant.
  4. Add the broth: Pour in the broth and bring to a simmer, allowing to bubble for about 15 minutes.
  5. Blend it up: Use an immersion blender to blend the soup to your desired consistency.
  6. Finish with cream: Return the soup to low heat, stir in the heavy cream, and heat through.
  7. Serve it up: Ladle the soup into bowls and garnish with fresh thyme and a drizzle of cream.

Notes
