Creamy Mushroom Chicken

A delightful dish featuring tender chicken in a rich, velvety cream sauce with earthy mushrooms.

  • 2 boneless, skinless chicken breasts
  • 8 oz mushrooms (button, cremini, or shiitake)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the Ingredients: Thinly slice mushrooms and mince garlic.
  2. Cook the Chicken: In a skillet over medium heat, add olive oil and season chicken with salt and pepper. Sear for 5-7 minutes on each side until golden. Transfer to a plate to keep warm.
  3. Sauté the Mushrooms: In the same skillet, add oil if needed and sauté mushrooms for 5-6 minutes until soft and golden.
  4. Add the Garlic: Mix in minced garlic and thyme, cooking for about 1 minute until fragrant.
  5. Make it Creamy: Pour in cream, stirring to scrape any brown bits, and simmer for a few minutes.
  6. Return the Chicken: Place chicken back in the skillet, spooning sauce over it and simmering for 3-5 minutes until heated through.
  7. Taste and Adjust: Adjust seasoning with salt and pepper or lemon juice as desired.
  8. Plate It Up: Serve the creamy mushroom chicken with sauce on top.

Notes

Serve over rice, egg noodles, or mashed potatoes. For added flavor, sprinkle with parsley or thyme.
