  • 8 oz Gluten-Free Pasta
  • 2 cups Fresh Spinach
  • 1/2 cup Sun-Dried Tomatoes
  • 1 cup Heavy Cream
  • 4 cloves Garlic, minced
  • 1 cup Chicken Broth
  • 2 tbsp Olive Oil
  • 1/2 cup Parmesan Cheese, grated
  • Salt & Pepper, to taste

Instructions

  1. Prep your ingredients by gathering them on your counter; chop the garlic and slice the chicken if needed.
  2. Cook the gluten-free pasta in boiling water according to package instructions until al dente.
  3. Sear the chicken thighs in a large skillet with olive oil for about 5-7 minutes on each side until golden brown.
  4. Add minced garlic and sun-dried tomatoes to the pan, stirring for 1-2 minutes until fragrant.
  5. Create the sauce by pouring in chicken broth and heavy cream, then letting it simmer for about 5 minutes.
  6. Fold in the spinach and Parmesan cheese, stirring until melted.
  7. Combine with the cooked pasta, mixing well to coat.
  8. Taste and adjust seasoning as needed before serving.
