Creamy Garlic Pork Chops with Roasted Potatoes

A comforting dish with fork-tender pork chops in a luscious garlicky cream sauce, paired with crispy roasted potatoes.

  • 4 Pork Chops (bone-in or boneless)
  • 1 cup Heavy Cream
  • 4 cloves Garlic, minced
  • 1 cup Chicken or Vegetable Broth
  • 4 Potatoes (Yukon Gold or Red), chopped
  • 2 tablespoons Olive Oil
  • Fresh Herbs (Thyme or Rosemary)
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by washing and chopping them into bite-sized pieces, coating with olive oil, salt, pepper, and half of the herbs.
  3. Roast the potatoes in a single layer on a baking sheet for about 25-30 minutes, flipping halfway through.
  4. Season the pork chops generously with salt and pepper.
  5. Sear the chops in a skillet over medium-high heat with olive oil for about 4-5 minutes on each side.
  6. Make the sauce by sautéing minced garlic in the same pan, then adding broth and scraping up brown bits.
  7. Add the heavy cream and remaining herbs, letting it simmer for 5-7 minutes.
  8. Combine the pork chops with the sauce to coat and reheat.
  9. Check the potatoes for doneness and adjust seasoning.

Notes

For a dairy-free option, substitute heavy cream with coconut cream and use vegetable broth.
