  • 1 cup of cooked rice (white, brown, or cauliflower rice)
  • 1 can (15 oz) of black or pinto beans, drained and rinsed
  • 1 cup of your favorite salsa (homemade or store-bought)
  • Optional toppings: sliced avocado, shredded cheese, diced onions, cilantro, sour cream, lime wedges

Instructions

  1. Season and cook the chicken: Mix your favorite spices and rub them on the chicken. Cook in a skillet over medium-high heat for 6-7 minutes on each side until golden brown.
  2. Prepare the rice: Cook rice according to package instructions, using a 2:1 ratio of water to rice.
