A rich and creamy Broccoli Rice Casserole that brings comfort and nostalgia to the dinner table.

  • 2 cups cooked white rice (long-grain or jasmine)
  • 2 cups fresh broccoli florets (or thawed frozen broccoli)
  • 1 cup sharp cheddar cheese (plus extra for topping)
  • 1 can cream of mushroom soup
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to the package instructions (about 15-20 minutes).
  3. Prepare the broccoli by chopping it into small florets and steaming for 3-5 minutes.
  4. Mix together the cooked rice, steamed broccoli, cream of mushroom soup, cheese (save some for topping), garlic powder, salt, and pepper.
  5. Transfer the mixture into a greased casserole dish, spreading evenly. Top with remaining cheese.
  6. Bake for 25-30 minutes or until bubbly and golden.
  7. Serve after letting it cool for 5-10 minutes.
