Savory Stuffed Acorn Squash

A delightful stuffed acorn squash recipe featuring ground turkey, cranberries, and wild rice, perfect for cozy autumn evenings.

  • 2 acorn squashes
  • 1 lb ground turkey
  • 1 cup cooked wild rice
  • 1/2 cup dried cranberries
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon sage
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Cut each squash in half lengthwise and scoop out the seeds.
  2. Drizzle a tablespoon of olive oil over the insides of the squash, season with salt and pepper, and place them face down on a baking sheet. Roast for about 30 minutes.
  3. Heat another tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion until translucent, about 5-7 minutes, then add minced garlic and cook for another minute.
  4. Add ground turkey to the skillet. Cook until browned, around 7-8 minutes, seasoning with salt, pepper, and sage.
  5. Fold in the cooked wild rice and cranberries, mixing well and warming for another 2-3 minutes. Adjust seasoning as needed.
  6. Stuff each roasted squash half with the turkey mixture, packing it in generously.
  7. Return the stuffed squashes to the oven and bake for an additional 15-20 minutes.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

Try adding cheese on top before baking for a melty finish or incorporate nuts for extra crunch.
