Strawberry White Chocolate Chip Coffee Cake Muffins

  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin pan by lining it with paper liners or greasing it lightly.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  4. Cream the butter: In a large bowl, beat the softened butter until creamy and gradually add in the sugar, beating until light and fluffy.
  5. Add the wet ingredients: To the butter and sugar mixture, add the sour cream, egg, and vanilla extract. Mix until fully combined.
  6. Combine the dry and wet ingredients: Gradually add the dry flour mixture to the wet ingredients, mixing gently.
  7. Fold in the chopped strawberries and white chocolate chips.
  8. Fill each muffin cup about two-thirds full.
  9. Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
  10. Cool for 5-10 minutes in the tin before transferring to a wire rack.
