Easy Raspberry Brownies

Delicious Raspberry Brownies combining rich chocolate and tart raspberries for a nostalgic treat.

Ingredients

  • 1 box brownie mix
  • 1/2 cup vegetable oil (or melted coconut oil or butter)
  • 2 eggs (or flax eggs for a vegan option)
  • 1 cup fresh raspberries (or thawed frozen raspberries)
  • 1/4 cup raspberry jam
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9-inch baking dish by greasing it or lining it with parchment paper.
  3. Mix the brownie mix, oil, and eggs in a bowl until just combined.
  4. Fold in the raspberries and raspberry jam gently.
  5. Add chocolate chips if using.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
