Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the softened butter and sugar until creamy and fluffy, about 2-3 minutes.
  3. Add the egg and pumpkin puree, mixing until smooth.
  4. Combine the flour, baking soda, baking powder, pumpkin pie spice, and salt in a separate bowl.
  5. Gradually incorporate the dry mixture into the wet, stirring until just combined.
  6. Scoop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for about 12-15 minutes, until edges are set and centers are soft.
