Chocolate Cherry Brownies

Deliciously fudgy brownies that combine rich dark chocolate with juicy roasted cherries for a decadent dessert.

  • 1 cup dark chocolate chips
  • 1/2 cup butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup roasted cherries
  • 1/2 cup chocolate chips (for topping)
  • Extra cherries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking pan with butter or line it with parchment paper.
  3. Melt the dark chocolate chips and butter together in a microwave-safe bowl.
  4. Whisk in the granulated sugar, then add the eggs one at a time, mixing well.
  5. Stir in the vanilla extract.
  6. Sift in the flour and salt, folding gently until just combined.
  7. Gently fold in the roasted cherries.
  8. Transfer the batter to the prepared baking pan.
  9. Add the extra chocolate chips on top.
  10. Bake for 20-25 minutes until a toothpick comes out with a few moist crumbs.
  11. Cool for 10 minutes before transferring to a wire rack and garnish with extra cherries.

Notes

For variations, consider adding nuts, spices, or coconut. Make sure to check baking time if doubling the recipe.
