Apple Pie Cupcakes

Delicious and portable Apple Pie Cupcakes that capture the nostalgic flavors of fall in a fluffy treat.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup apple compote
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine dry ingredients in a mixing bowl.
  3. Cream the butter and sugar until light and fluffy.
  4. Add the eggs and vanilla, mixing until smooth.
  5. Mix in the buttermilk and apple compote gently.
  6. Combine the dry ingredients with the wet mixture until just combined.
  7. Fill cupcake liners 2/3 full with batter.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Cool the cupcakes in the pan for 5 minutes, then on a wire rack.
  10. Make the frosting by mixing cream cheese and powdered sugar until creamy.
  11. Frost the cooled cupcakes and top with a sprinkle of cinnamon.

Notes

These cupcakes store well and can be frozen without frosting, icing them just before serving.
