Apple Cider Cookies

Delightfully soft and chewy cookies infused with the warm flavors of apple cider and spices, perfect for fall.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup apple cider

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a bowl.
  3. Cream the butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture and beat until combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Pour in the apple cider and mix until combined; the dough will be slightly wetter than traditional cookie dough.
  7. Scoop tablespoon-sized dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are set and lightly golden.
  9. Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, substitute the egg with a flax egg and use coconut oil instead of butter.
