Summer Peach Mousse Trifles

  • 2 ripe peaches, diced
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 yellow cake mix (or homemade yellow cake)
  • 1 cup milk (for cake mixture)
  • 3 large eggs (for cake mixture)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the yellow cake mix, milk, and eggs in a large bowl until smooth.
  3. Pour the batter into a greased 9×13 inch baking dish and bake for 25-30 minutes.
  4. Whip the heavy cream until thick, then gradually add powdered sugar, vanilla, and almond extract.
  5. Combine the diced peaches with the whipped cream mixture.
  6. Layer cake cubes and peach mousse in serving dishes.
  7. Chill for at least 1-2 hours before serving.
