No-Bake Orange Creamsicle Cheesecake

A delicious no-bake cheesecake that captures the nostalgic flavors of orange creamsicles in a creamy dessert.

  • 1 cup boiling water
  • 2 cups Graham cracker crumbs (about 14 sheets)
  • 6 tablespoons unsalted butter, melted
  • Pinch salt
  • 2 (8-ounce) blocks cream cheese, softened
  • 1 1/2 cups powdered sugar, divided
  • 2 cups heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • Zest of 1 orange (optional)

Instructions

  1. Prepare the Jello: In a bowl, dissolve the orange jello into 1 cup of boiling water. Stir until fully dissolved and set aside to cool slightly.
  2. Make the Crust: Combine the Graham cracker crumbs, melted butter, and a pinch of salt until the crumbs resemble wet sand.
  3. Press the Crust: Firmly press the crumb mixture into the bottom of a 9-inch springform pan.
  4. Prepare the Cream Cheese Filling: Beat softened cream cheese with an electric mixer until smooth. Gradually add in 1 cup of powdered sugar and mix until well combined.
  5. Incorporate the Jello Mixture: Pour the cooled jello into the cream cheese mixture while mixing on low speed.
  6. Whip the Heavy Cream: In a separate bowl, whip the heavy cream and remaining 1/2 cup of powdered sugar until stiff peaks form.
  7. Fold Whipped Cream into the Cheese Mixture: Gently fold the whipped cream into the jello-cream cheese mixture.
  8. Add Orange Zest (Optional): Fold in the orange zest if using.
  9. Assemble the Cheesecake: Pour the cream cheese mixture over the crust, spreading it evenly.
  10. Chill: Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
  11. Serve It Up: Once set, run a knife along the edges before releasing the cheesecake from the springform pan. Garnish as desired.

Notes

Store any leftovers in the fridge for up to 5 days. Can be garnished with fresh orange slices or whipped cream.
