Mango Butter Bars

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh mango, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish with cooking spray or butter and line with parchment paper.
  3. Mix the flour, baking powder, and salt in a medium bowl.
  4. Cream the softened butter and granulated sugar until fluffy and pale—about 3 minutes.
  5. Add the vanilla extract and mix until just incorporated.
  6. Combine the dry ingredients with the butter mixture until just mixed.
  7. Fold in the diced mango gently.
  8. Pour the batter into the prepared baking dish and smooth the top.
  9. Bake for 25-30 minutes until golden edges and a toothpick comes out with a few moist crumbs.
  10. Cool for 10 minutes, then lift out using parchment to cool completely before cutting into squares.
